Lemon meringue pies
This tart is filled with baked lemon curd made with freshly squeezed lemon juice. It is topped with Italian soft meringue which is a meringue where a hot sugar syrup is whisked into the egg whites and effectively cooks the whites during the mixing stage. The contrasting flavours of sharp lemon and sweet meringue work brilliantly together.
